Apple rings in Sweet Egg Butter

  • 3 egg whites
  • ˝ cup icing sugar
  • Ľ cup lemon juice
  • ½ cup self-rising flour
  • finely grated lemon skin
  • 2 granny smith apples, cored and sliced ahout 1 cm thick
  • 1 soupspoon icing sugar extra
  • 2 cups oil mixture (olive and veg.)


  • 60 gr unsalted hutter
  • 1/3 cup brown sugar
  • ½ cup maple syrup
  • finely zested rind of 1 orange
  • liquid cream
  • Beat egg white and icing sugar until thick and glossy.
    Beat in two soupspoon lemon juice, then fold in flour and lemon rind. Cover and refrigerate for 30 minutes.
  • For sauce, melt butter and sugar with maple syrup in a small saucepan, stir in orange rind and cream and heat gently. Do not boil. Brush apple slices with remaining lemon juices, sprinkle with extra icing sugar and dip into butter. Deep fry apple rings in batches of hot oil for 1 minute on each side, until golden.
  • Using slotted spoon, remove apple rings and sit on paper towel. Serve apple rings with warm sauce poured over.
